Coppa is cured meat prepared with whole heads, pork rind and other simple parts of the swine, born and raised in Marche. It’s a precious cut skilfully seasoned with pine nuts, orange and lemon zest, celery, carrots, pistachio nuts, salt, pepper and a mix of spices belonging to a typical recipe of our Vergare - the village matrons. The meat is then put under a press for over twelve hour, in a specific handmade mould passed down for four generations.
Galantina is a cold cut stuffed with selected meats such as chicken, Vitellone Marchigiano IGP (PGI young steer from Marche), turkey, cooked ham and Mortadella IGP (PGI). The mix is enriched and flavoured with Parmigiano Reggiano DOP cheese, olives, celery, carrots, pistachio nuts, natural flavours and boiled eggs in the core. Finally, Galantina is boiled for five hours and pressed.
Coppa and galantina are gluten and lactose free and with no extra additives or preservatives.
